Packed with nutrition and tons of flavor, quinoa has become one of my favorite go-to’s in many side dish and salad recipes. Quinoa, commonly referred to as a superfood, is a whole grain made from edible seeds. It has a high protein content than brown rice or most other whole grains and is gluten free. It’s also incredibly easy to prepare and very inexpensive so naturally, it’s a staple in my kitchen.
I love putting together recipes that feature quinoa mainly because the possibilities are endless. This Apple Cranberry Granola Quinoa Salad is bursting with delicious whole grain flavor and is the perfect complement to any meal.

Apple Cranberry Granola Quinoa Salad
Serves 6
Ingredients:
1 cup golden quinoa
2 cups water
2 apples, chopped
3/4 cup Off Road Edition Granola
1/4 cup feta cheese
2 tbsp apple cidar vinegar
1 tbsp agave
Directions:
In a sauce pan, bring quinoa and water to a boil. Reduce heat, cover and simmer for 15 minutes. Remove from heat and place quinoa in a large bowl to cool.
Once quinoa is cooled completely, add apples, granola and feta into the bowl. In a separate small bowl, whisk vinegar and agave. Pour over quinoa and mix to combine.
